Hello,
We have a Pritunl server running on Debian. Inside the office, all traffic goes through a Fortinet firewall. When connecting over Wi-Fi, we get 80–100 Mbps through the VPN, but over a wired connection the speed doesn’t exceed 10 Mbps. We haven’t made any special configuration on the Fortinet firewall. What could be causing this issue?

Typically CPU core speed will have the largest effect on the connection speed. You can try the ChaCha20-Poly1305 cipher option in the server settings which may provide better performance.
